Smokey Citrus Kabobs

Please keep in mind that I use a Traeger Wood Pellet Grill, so the controls/settings refer to the controls/settings on my Traeger. The recipe can easily be converted to whatever type of griller/smoker you have with a little bit of experimenting (eg. you don't have to start your grill on Smoke Setting).


1 lb. pork tenderloin

1/3 cup Traeger BBQ Sauce (or your favorite sauce)

1/2 cup orange marmalade

2 tsp. prepared horseradish

2 cups fresh pineapple and mango chunks


Cut pork into 3/4-inch cubes; set aside.  Combine barbecue sauce, marmalade and horseradish in a shallow dish; add pork cubes to mixture and mix to evenly coat.  Refrigerate for 30 minutes.  Thread pork onto skewers*, brush with marinade then discard remaining marinade.  Start Trager grill on Smoke with lid open until fire is established (about 5 minutes); Swithc setting to High (450 F on thermostat).  Place skewered pork kabobs on grill; close lid and cook 10 to 12 minutes or until pork is no longer pink.  Serve with fresh pineapple and mango chunks.

Recommended Pellets:  Cherry or Maple   *If using wood skewers, soak 20 minutes before using.  This will prevent them from burning.
