Caribbean Roast Pork Loin

Please keep in mind that I use a Traeger Wood Pellet Grill, so the controls/settings refer to the controls/settings on my Traeger.  The recipe can easily be converted to whatever type of griller/smoker you have with a little bit of experimenting (eg. you don't have to start your grill on the Smoke setting to start).  Hope you enjoy!


1/2 tsp. virgin olive oil

1/2 tsp. ground black pepper

1/4 tsp. ground nutmeg

1/4 tsp. ground cinammon

1 lb. boneless pork loin


Combine olive oil and dry ingredients in small bowl; mix to blend.  Evenly coat pork loin wiht mixture.  Start Traeger grill on Smoke with lid open until fire is established (about 5 minutes); switch setting to Medium (300 F on thermostat) allow grill to pre-heat for 10 minutes.  Place loin on grill fat side up.  Close lid and cook until internal meat temperature reaches 150 F.  Remove from grill and let stand for 10 minutes.  Slice and Serve.  

Recommended Pellets:  Cherry or Maple
