Multi brisket cook coming up

Greetings all…well, my UDS is just about finished and I have some catching up to do. I have saved a couple of threads on how to cook with a UDS but the one thing I don't know is if there is anything special I have to do to cook two or more brisket's at one time on this thing. It is time for the company "Smoke Off" again and I have been asked if I am going to do a brisket. One thing I found last year was that one brisket was not enough so this year I am going to do two. My UDS has two grates in it and I was wondering if I should stack the brisket's or should I put them side by side? Also, should I plan to add extra time to the cook? Thanks for any advice that may be shared.
