For those interested, I finally found both ingredients and recipe for the cure I needed for my pork belly.  It is in zip lock bags and will cure for up to 10 days.  I will then smoke for a few hours most likely with applewood and then slice on my machine after it rests.  I can't wait to fry it up and will share, as I do here with most projects, my results.

If anyone has smoked their own pork belly to make bacon, I'd love to hear your process and results.
