which is better for bark formation,a dry rub or wet rub ?

hmm… This is almost a trick question..

There are a lot of variables to getting a good bark, and both dry rub application and wet rub application work equally well, depending on how they are used, and what what they are used on.

Personally I prefer a wet rub application.

For pork I use a web rub application using yellow mustard as the base.
For many other meats I may use an oil (ie: olive oil).
