I'm making pulled porkk for about 25 people on saturday.  If I read the logs correctly I need to cook for about 60-90 min per pound.  How in the world do I smoke for 39 hours?  I need some major help, I did brisket for approx 15 hrs and that was taxing on me and my lack of sleep.  What are the tips for smoking for this long?

Thanks

Jim

Is it too late to reply?  I would base it on the size of the largest butt.  Let's say that's 8 pounds.  You don't multiply by that number to make 32 hours cook time.  Does that make sense?  For example, I have done two butts at once and they were both done at around 12 hours.  What I would do, for one thing, is read the conversation that I had with Kevin, our host.  We talked all about pork butts.  That one is entitled “My Bark Had No Bite”.  As a matter of fact, I am doing a butt tomorrow.  I am going to use Kevin's technique on wrapping the butts in foil which he explains in that string.  One thing that will do for you is reduce your total cook time which we all could benefit from.

By the way, I have gotten pretty good at this stuff but am by no means a pro.  More opinions may help you.

Good luck!  Let us know how it came out.

What you're doing is multiplying the total pounds of meat by 90 minutes per pound — like Beltwaybbq said, base your time calculation on the largest butt times 90 minutes per pound.
