need some help here

I have been smoking for the past 2 years…….the 1st year everything was great…….food came out incredible.  For the past year or so it has been hit or miss, more miss.  I have an offset firebox smoker and I use oak wood that I get from a tree guy.  Lately I have been getting a bad bitter tatse in my food, it has the taste of lighter fluid, but I do not use lighter fluid.  I smoke the same way I did the first year when I had no problems.  I have been told I may be gtting too much smoke, whcih I guess could be the case, but again I had a ton of smoke the first year and never had issues.  I was told it could be build up in my smoker, I have a new smoker.  I now wrapp my food in foil to help, which I never did before, and yesterday I had my ribs wrapped after the 1st hour and still had this bad tatse.  I am at a lose.  Please help.  The puzzling thing is my first year I would smoke my food for 6-8 hours depending on the type of meat, would have a ton of smoke, with no foil, and the food was great.  That is why I am having a hard time beliving it is too much smoke, not to mention I have seen a lot of prfessionals cook and I dont see them using foil……thanks.
