Raking leaves and smokin' a pork butt today.  Can't get much better than that for a fall Saturday.

Got a question for anyone who comes across this post.  I purchased a butt from a new place yesterday.  It came with the picnic portion attached which I'm fine with, but my question has to do with the skin.  I was a little concerned about the thickness of that skin so I trimmed much of it off leaving mostly the white, fat layer.  I did leave some skin on though.  In future, should I leave it alone or is it best to do as I did trimming much of it off?  If you have ever read my posts here, you know I am always trying to get that dark black look to my pork butts and the delicious Dr. Bark.

Thanks a lot!
