Kevin- I just finished watching your new videos (BBQ and Grilling)and can't wait to try out some of the techniuqes you mentioned.  I'm new to the BBQ competition arena.  I recently attended the FBA funcook and became a certified judge, so I hope to get involved more over the next year or two.

I've never re-seasoned my meat as you did as I've always worried about getting it too salty but I'm gonna try it out this weekend!

As far as feedback on the content- I enjoyed both of them, though the BBQ was my favorite.  (btw- did you notice that "basic" was spelled wrong on the menu section for "basic beef rub"? ) lol  I think it was "bacsic"… just nitpicking there- other than that, I didn't notice anything that I would have done differently. Good Job!

What mods, if any did the WSM you cooked on have? btw

I need a "real" smoker, I guess.  The one I've been using is one of those Bass Pro Shops Smokey Mountain cookers with the propane burner, cast iron wood chip box and water pan… it turns out some really good meat and is convenient but it's not true BBQ…I guess.

Good Luck the rest of this season… maybe I'll see you at a competition!

Thx for stopping by!

I appreciate you buying the DVD's, and glad you liked them.  And yes, I know about the basic rub on the menu…

The WSM was stock, and we used sand instead of water (watch your temp if you do this).

Let us know how things turn-out this weekend. I believe I got some rubs to you just in time.
