Hi folks!

Does anyone have a simple recipe and set of instructions that can help me with this?  I want to get a 5lb. pork belly and do whatever curing needs to be done then smoke with applewood.  I am always looking for new smoke projects as well as a reason to use my electric blade slicer.  This serves both those desires.  One question.  Can I use a rib rack for the belly?  My rig won't allow me to use bacon hangers.
